National Pie Day

January 23rd was national pie day...



All I could think about was a pie. What's your favorite pie? Check out this recipe for Coconut S'more Pie, one of my favorites:

Coconut S'more Pie

ingredients
1¾ cups graham cracker crumbs
1 tablespoon sugar
½ tablespoon cinnamon
1 cup slivered almonds
½ cup butter, melted
1½ cups shredded coconut
1½ cups sweetened condensed milk
3 DOVE CHOCOLATE DISCOVERIES™ Chef-Series
White Chocolate bars, chopped (6 oz.)
1 teaspoon vanilla extract
3 DCD Chef-Series Dark Chocolate bars, chopped (6 oz.)
1½ cups miniature marshmallows

PREPARATION
1. Adjust oven racks to middle and highest levels. Preheat oven to 375 degrees. Blend graham cracker crumbs, sugar, cinnamon, almonds and melted butter in a large mixing bowl. Press the mixture into a buttered 10" cake pan and bake for 5 to 7 minutes on the middle rack until golden brown.
2. Remove pan from oven and sprinkle with coconut. Drizzle with ½ cup of condensed milk and return to oven until bubbly and golden, about 10 minutes. Remove from oven.
3. For bottom layer, combine White Chocolate, ½ cup condensed milk and ½ teaspoon vanilla in a microwave-safe bowl. Melt chocolate in microwave on HIGH at 20-second intervals, stirring in between each until smooth. Pour into cooled crust. Refrigerate.
4. For middle layer, repeat step 3 using Dark Chocolate, ½ cup condensed milk and ½ teaspoon vanilla. Pour over White Chocolate layer and refrigerate for 10 minutes.
5. For top layer, evenly cover top with marshmallows. Adjust oven temperature to "Broil" and place pan on top rack for 15 to 20 seconds at a time until the marshmallows turn a gooey, golden brown (be careful not to burn). Remove from oven and refrigerate for 1 hour before serving. Makes one 10" pie.

Secret Santa

When I was last in Florida we decided to draw names for secret Santa. I got my good friend Jackie C. name. I was not sure what I was going to get her... I was stumped you could say. Well her sister posted some dance pictures of her on her Facebook page... So I got this bright Idea to make a scrapbook layout and frame it! What a more personal gift. Jackie loves to dance...



I really love the way it turned out and hope she love it to!
